Pear, Goat Cheese and Bacon Salad

Makes 4 servings

4 cups baby spinach
2 cups romaine lettuce, chopped
8-10 tablespoons goat cheese, crumbled
1/3 cup candied pecans, chopped
¼ cup bacon, cooked and crumbled
1 pear, sliced thin

FOR POPPYSEED DRESSING

1 cup good quality mayonnaise
¼ cup apple cider vinegar
2 to 3 tablespoons granulated sugar
2 teaspoons poppy seeds
½ teaspoon salt

Toss together greens, goat cheese, pecans and bacon.

To make dressing, whisk together all ingredients in a small bowl until well combined.

Toss the salad with Poppyseed Dressing to taste. Mound salad on 4 plates. Garnish with pear slices.
