Roasted Okra

1 pound okra
Olive oil spray
1/2 teaspoon salt

Preheat oven to 450° and spray a cookie sheet or shallow baking dish with olive oil. Rinse okra and spray lightly with olive oil. Place on oiled cookie sheet and sprinkle with salt. Place in oven and use a spatula to turn okra every 5 minutes until okra begins to crisp and turn a golden brown, about 15 minutes. Enjoy hot out of the oven.
