INGREDIENTS
4 cups locally grown watermelon,diced
1 cup locally grown red and yellow bell peppers, diced
1 tablespoon locally grown mint, minced
1 tablespoon locally grown cilantro, minced
1 cup locally grown cucumbers, diced
½ cup locally grown onion, diced
2½ tablespoons lime juice
1 tablespoon local olive oil
INSTRUCTIONS
Place all ingredients in a large bowl and toss. Served chilled or at room temperature with chips or as a salad.
